Milk: The Chemical Softener

Water is neutral. Milk is complex. By swapping water for milk (as in Shokupan or Sandwich Bread), you introduce three new variables: Fat, Protein (Casein), and Sugar (Lactose).

The Chemistry: The Lactose Exception

Standard baker's yeast (S. cerevisiae) and most sourdough bacteria cannot ferment lactose.

  • The Sweetness: While the glucose in flour is consumed by the yeast, the lactose in milk remains untouched. It stays in the dough as residual sugar.

  • The Crust: This residual sugar caramelises rapidly in the oven, leading to a crust that browns much faster and deeper than a water-based loaf.

The Interaction: The Whey Weakness

Raw milk contains an enzyme called glutathione (found in whey protein) which can weaken gluten structure, creating a slack dough.

  • The Scald: This is why traditional recipes call for "scalding" the milk (heating to 82°C) before using it. This heat denatures the glutathione, protecting your gluten network.

The Protocol: The Soft Loaf

  • Hydration: Milk is 87% water. If a recipe calls for 100g of water, you need approx. 115g of milk to achieve the same hydration feel.

  • Baking Temp: Because of the lactose browning, bake milk breads at a lower temperature (180°C–200°C) to prevent the crust from burning before the centre is cooked.
