Spelt is the ancient cousin of modern wheat. Many bakers switch to it for its nutty flavour or perceived health benefits, but they are often shocked when their dough collapses into a puddle.
Spelt is high in protein, but chemically, it is weak.
The Chemistry: The Gliadin Dominance
Wheat protein is made of two parts: glutenin (elasticity/strength) and gliadin (extensibility/stretch). Modern wheat is balanced. Spelt is heavy on gliadin.
The Result: Spelt dough stretches endlessly but lacks the "snap-back" elastic strength to hold a high vertical shape. It flows like lava.
The Interaction: Rapid Fermentation
Spelt protein is more water-soluble than modern wheat protein. This makes it more accessible to enzymes and bacteria.
The Danger: Spelt ferments significantly faster than wheat. A timeline that works for a country loaf (e.g., 5-hour bulk) will severely over-proof a Spelt loaf, leading to structural collapse.
The Protocol: Treat It Gently
The Blend: To get the flavour of Spelt with the height of sourdough, blend it. 50% Spelt / 50% White Bread Flour is the sweet spot.
The Tin: Because Spelt struggles to hold its shape on a baking stone, it thrives in a tin (loaf pan) which provides external support.
